My dad doesn’t really like pasta so I thought of a way to fix him spaghetti without any pasta in it.  Here is my version of spaghetti squash spaghetti!


2 large cloves of garlic

1/2 cup of chopped celery

1/2 cup of chopped red onion

large spaghetti squash

1/2 large red bell pepper

Tomato Basil spaghetti sauce (Bertolli or other)

3 tablespoons first pressed extra virgin olive oil

1/2 large Portobello mushroom

In large deep fry pan, sauté the garlic, onion, bell pepper and mushroom in the olive oil until browned on medium high.  Add chopped celery and sauté until celery is mixed in.  Add the spaghetti sauce and mix in and cook a few minutes.  Add the spaghetti squash (noodles), mix in and let simmer for 5 minutes.  Serve.

Note:  To get the (noodles), you must cut the spaghetti squash in half, and bake in the oven on a cookie sheet for 45 min. to 1 hour, cut side up at 350 degrees.   Then remove from the oven and scrape out seeds and any burnt up looking squash.  Use a fork to scrape out the cooked strings of the squash into a bowl, so it looks like the squash in the first picture below.
